Few dishes expose a cook’s fundamentals like a plain steak: there is nowhere to hide. In this segment from his Ultimate Cookery Course, Gordon Ramsay demonstrates how to cook a perfect steak, from tempering and seasoning the meat to basting with butter and, crucially, resting it before slicing.
His pan-facing rule of thumb is worth stealing: get the pan properly hot before the steak goes anywhere near it, and turn the steak only once it releases without a fight.
