Ingredients:

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1/2 cup cornstarch
  • 2 large eggs, beaten
  • 1/4 cup vegetable oil, for frying

Firecracker Sauce:

  • 1/2 cup hot sauce (such as Frank’s RedHot or Sriracha)
  • 1/2 cup light brown sugar
  • 2 tablespoons apple cider vinegar
  • 1/4 teaspoon red pepper flakes (adjust to your desired heat level)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt

Garnish:

  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  2. Season the chicken pieces with salt and pepper. Place the cornstarch in a shallow dish. Dip each chicken piece into the beaten eggs and then coat them with cornstarch, shaking off any excess.
  3. In a large skillet or wok, heat the vegetable oil over medium-high heat. Fry the chicken pieces in batches until they are golden brown and crispy, about 2-3 minutes per side. Transfer the cooked chicken to the prepared baking sheet.
  4. In a small saucepan, combine the hot sauce, light brown sugar, apple cider vinegar, red pepper flakes, garlic powder, onion powder, and salt. Cook the sauce over medium heat, stirring occasionally until the sugar has dissolved and the sauce is slightly thickened, about 5 minutes.
  5. Pour the firecracker sauce evenly over the cooked chicken on the baking sheet, turning the chicken pieces to coat them completely in the sauce.
  6. Place the baking sheet in the preheated oven and bake the chicken for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the sauce has caramelized.
  7. Remove the chicken from the oven and transfer it to a serving platter. Garnish with thinly sliced green onions and sesame seeds.
  8. Serve the firecracker chicken hot with steamed rice and a side of vegetables, such as steamed broccoli or sautéed green beans.
